Homemade Granola...YUM!




Doesn't this just look like pure indulgence? Actually, its super healthy and amazingly delicious! I love homemade granola, but most recipes call for like 10 kinds of whole grains and seeds and nuts. Not that these ingredients aren't awesome, but by the time you've bought all the expensive ingredients and spent time measuring, you might as well have bought a few store-bought bags and called it a day. We have reached a unanimous decision that this recipe is the best we have tried so far and the only grain you need is oatmeal.




Here's what you need:
2 cups rolled oats

1 teaspoon cinnamon

1 teaspoon salt (you can use a lower sodium salt substitute)

3 tablespoons olive oil
1/4 cup honey (I used sugar-free syrup)

1/4 cup firmly packed light brown sugar

1 teaspoon pure vanilla extract


Any add ins you like would also be great but aren't necessary. Ideas are chopped pecans, almonds, raisins, or any other dried fruit.

Preheat oven to 325. Mix all ingredients except the add ins together in a big bowl (go ahead and use your hands) and spread it out on a greased sheet pan. Pop it in the oven for 10 minutes and then take it out and stir it around to make sure it cooks evenly. Then sprinkle your nuts and fruit on top and put it back in for another 10 minutes. Enjoy the fabulous aroma that fills your house while this is baking. Now take it out and allow it to cool. Caution: smelling the freshly baked granola may cause you to eat half the pan while its hot. Store in an airtight container and enjoy it sprinkled on oatmeal, fruit, or in a parfait made with fruit and yogurt and topped with granola...DELISH!

Sounds yummy--agave nectar would work instead of the honey and has a much lower glycemic index.
